Traditional sourdough undertakes a minimum 18 (max 48) hour cool fermentation to optimise digestibility. This bread is composed of unbleached organic or sustainable wheat flour (80%) together with organic spelt, stone ground whole grain wheat and stone ground wholegrain rye, leaven, sea salt and chlorine free filtered water. This bread has excellent keeping qualities and may be stored in the fridge for 4 to 5 days.
